Ardennes Ham with Corsendonk® Abbey Brown Ale

Ingredients: for four servings
4 leg pieces of Ardennes ham
1.5 dl (about 5 oz.) Corsendonk® Abbey Brown Ale
meat or vegetable broth
250 grams (about 9 oz.) green beans
500 grams (about 18 oz.) new potatoes
1 onion, shredded
1 small bag of mixed salad
100 grams (about 3.5 oz.) slivered almonds
100 grams lean bacon
1 qt water
olive oil
salt & pepper

Preparation
Put the ham pieces in a pan, cover with broth, and simmer for about 1 ˝ hours. Remove the ham pieces from the pan. To make the sauce, sieve the broth and boil down to half its volume. Add the beer and heat for about 15 minutes on low heat. Season with salt & pepper to taste.

Roll each piece of ham in bacon (and rub with a little olive oil to keep it from drying out) and put in a 400° F oven for about 20 minutes. Remove the ham from the oven and toast the slivered almonds under the broiler.

Cook the new potatoes in water till done. Saute the green beans and onion in olive oil until the beans are done al dente.

Arrange the ham, green beans, potatoes and salad on a plate, with the sauce on the side, sprinkle the almonds over the ham, and serve with a Corsendonk® Abbey Brown Ale.
